How to make pumpkin spice and cream cheese muffins

For the icing put softened cream cheese and powdered sugar in a bowl of a stand mixer or a plastic bowl if you have a hand mixer. Once completely mixed together roll into a log with plastic wrap

Place in the freezer for the remaining of the prep time

Here are the ingredients for the muffins! Preheat oven to 350 F

Use a paddle attachment of the mixer

Place eggs, oil, and pumpkin in the mixer and mix until all combined

All mixed!

Add sugar into the pumpkin mixture and mix until well combined

All the sugar is incorporated

Mix all of the dry ingredients together

All mixed! Now add one third of the dry mixture to the pumpkin mixture at a time

First addition

First addition has been mixed in

Second addition

And finally the third addition

This is the batter

Line 24 cupcake tins with paper liners

Use an ice cream scoop to get equal portions of the batter

Fill cups half way with the batter

To make the topping, mix together flour, sugar, cinnamon, and cold butter

All combined! Now get the cream cheese out of the freezer and drop equal amounts into each cupcake

Now cover cupcakes with remaining batter

Finally, sprinkle crumble mixture on top

All done! Place in the oven for 20-25 minutes

This is the inside of the cupcake! The cream cheese is all melted and delicious
