For each banana, use 1/4 cup of simple syrup. Pour into a heavy pot and use moderate heat to boil the syrup. Carefully swirl the mixture every few minutes. Be very careful as it gets very, very hot.
Meanwhile, have some sesame seeds ready and slice the bananas. Arrange the slices on parchment paper or a silicone mat. Place on a baking tray for support. Do not use wax paper, it may stick.
When it bubbles rapidly and just begins to color (above), pay attention. From this point the mixture browns very quickly. Have the fruit and sesame seeds in place before this stage!
Quickly pour the caramel over the bananas and sprinkle with the sesame seeds Work fast as the caramel hardens quickly. (Silpat mat used above)
The crunchiness of the caramel with sesame seed balances nicely with the smoothness of the bananas. Enjoy!
If it boils past the caramel stage, it may blacken and harden &is extremely difficult to remove. The pot may need to be discarded. Have everything in place before bubble stage. http://goo.gl/wRi61C
